One thing I’ve always hated about cooking is never having anything on hand. I can count on my fingers the times in my life when I could just look in the pantry and “whip up” something. I’ll apologize right now to my kids that it has taken me so long to understand what staples are really needed. I am a slow learner when it comes to cooking. However, this time around with Weight Watchers I finally figured it out. If you always have on hand some turkey burger, canned broth, diced tomatoes, green and red peppers, garlic, onions, celery, and spices (especially basil) you can pretty much whip up some great meals.
I love the Skinnytaste site. Everything I’ve made from this site is good and I love that she always gives weight watcher points.
I think I’m going to try it with oregano and garlic powder (two ingredients I use for a go-to casserole I’ve made for years) instead of the Italian seasoning (which is probably pretty much the same thing in reality).
This would be a good one to make ahead and freeze, too. I know the grandkids would love it.
So, Travis and Trevor, let me publicly apologize right now for the french toast and grilled cheese, involving toast from the toaster, that I made when you were growing up. Who knew there was so much more to cooking? And look at me……planning freeze ahead meals. Will wonders never cease!
